If I were an Max level alchemist on a Max level toon, where would I learn/find the new epic gem x-mutes?
You wouldn't because they don't exist. The only way to get epic gems is to buy them on the AH or with the currency dropped in non-LFR Dragon Soul.
Yeah, they might make them available via transmute at a later date, but for now you can only get them in regular or heroic DS.
